We utilize a state of the art process to preserve fruits and candy items to provide a fun and healthy alternative to snacking. The same process was used to send food into space with the astronauts. The Freeze Drying process consists of three distinct phases. The first freeze phase will freeze the food to approximately -60 degrees over a period of 9 to 12 hours. In the middle drying phase it applies a deep vacuum to the chamber then repeatedly warms and cools the trays of food. This portion of the drying process continues for up to 30 hours. During each of these heating and cooling cycles the moisture sublimates out of the food as a gas and freezes on the drum. When the machine senses that the food has reached a certain percentage of dryness it enters a third phase of the process. During this final drying phase it remains under a deep vacuum and warming temperature to remove any remaining moisture from the food. This final phase lasts for 7 to 12 hours. The entire process takes from approximately 24 to sometimes near 50 hours for a single batch. This time varies based on the type of food and how much moisture is in it as well as how dense the food item is.
